Our Valentine’s Day and a Recipe

I hope everyone had a nice Valentine’s Day yesterday! My husband surprised me by being home yesterday—so we spent a nice day together! We didn’t do gifts this year, but we exchanged cards, and I made these goody bags for the kids. It’s a little “young” for their ages, but I thought it was cute—and I thought they would get a kick out of the one jiggly eye in the middle, which they did :) and I KNEW they wouldn’t turn down CHOCOLATE, no matter what it came in!

We had Baked Ziti, garlic bread, and salad for our Valentine’s dinner—and it was delicious, as always, but being Valentine’s Day made it even more special! ♥

Boy, am I glad there are leftovers for lunch today!! :) Mmmmm.

This is the recipe for it, in case you are interested…

Baked Ziti

1 lb. dry ziti pasta

1 onion, chopped

1 lb. lean ground beef

2 (26 oz.) jars spaghetti sauce

4 c. shredded mozzarella & provolone cheese, mixed

16 oz. sour cream

2 Tbsp. grated parmesan cheese

1 (24 oz.) cottage cheese

Bring large pot of lightly salted water to boil. Add pasta and cook until tender, about 8 minutes; drain.

In a large skilled, brown ground beef and onion over medium heat. Add spaghetti sauce and simmer 15 minutes.

Preheat oven to 350. Butter a 9 x 13-inch pan. Layer as follows: sauce mixture (a little), half pasta, half shredded cheese, half sour cream, half cottage cheese, half sauce; Repeat. Top with parmesan cheese.

Bake for 30 minutes or until cheeses are melted.

I know you won’t be disappointed!!

Later we had chocolate cobbler (recipe found HERE) with vanilla ice cream and watched a movie—which I won’t even give you the title for, because it was really DUMB—lol :) Which surprised me a bit since it came from Hallmark! But, never-the-less, it was a really good day—and I hope yours was as well!

Today I go on a diet! Smile

Karen, that is so sweet that you and your sweetheart hubby spent the day together. You dinner table look so inviting and the dinner made my mouth drool!
